Why We Chose Gir Cows: The A2 Advantage
When we started Gowraj, one question was never negotiable: Which cows?
The A1 vs A2 Science
All milk contains a protein called beta-casein. There are two types:
- A1: Found in most Western breeds (Holstein, Jersey)
- A2: Found in indigenous breeds (Gir, Sahiwal, Red Sindhi)
A1 milk releases BCM-7 during digestionāa peptide linked to digestive discomfort and potential health issues.
A2 milk digests cleanly, like human breast milk.
Why Gir Specifically?
Among A2 breeds, Gir cows are exceptional:
- Highest fat content (4-5%)
- Most heat-resistant
- Disease-resistant naturally
- Gentle temperament
- Historical significance in Vedic culture
The Difference in Ghee
Gir cow ghee has:
- Richer golden color
- More pronounced aroma
- Higher A2 protein content
- Better nutrient profile
- Superior taste
